We suggest you try making dried apricots at home. Despite the fact that we are all very familiar with store-bought dried apricots, apricots or kaisa, if you have a lot of apricots, then it’s worth taking the time to wither them for the winter. Their taste will be more intense, and many times more vitamins will be retained! Although cooking itself at home, of course, the process is not so simple. But, as they say, the game is worth the candle!

To prepare dried apricots, take ripe fruits, wash them and leave them to dry a little.

Next, we remove the seeds and sprinkle the fruits, ready for processing, evenly with sugar. For 1 kg of apricot we take 350 g of sugar.

We leave them in this form for 25-30 hours at a temperature of 22°C.

During this time, the apricot will have time to release juice, which needs to be drained. Then you can preserve it, or you can just drink it.

Pour the fruits themselves with hot syrup at a temperature of about 85°C and leave for 7 minutes, covered with a lid. For syrup: for 1 kg of apricot we take 300 g of sugar and 350 g of water.

Then put the apricots on a baking sheet and simmer in the oven for half an hour at a temperature of 80°C, and then for another 35 minutes twice at temperatures of 65-70°C and 45-50°C.

Next, cool the dried apricots. The resulting syrup must be drained again (you can use a sieve for this), and the apricots should be placed on a tray or baking sheet in the form of a lattice to allow the juice to drain. Cover with a thin cloth and place somewhere warm to dry.Ideally, of course, the temperature should be about 30°C. You can dry it in the sun - in hot weather, in the oven or in an electric dryer. In the latter, drying will take 6-7 hours.

All that remains is to collect the apricots and package them in paper bags or boxes. So, they should be left in a ventilated and dry room for a period of up to a week. And only now, consider that your delicious and healthy dried apricots are ready. You can store them for the winter either in bags or in jars.
