Abkhazian adjika, real raw adjika, recipe - classic
Real adjika, Abkhazian, is made from hot hot pepper. Moreover, both from red, already ripe, and from still green. This is the so-called raw adjika, without cooking. Adjika in Abkhazian style is made for the whole family, because... this preparation for the winter is seasonal, and in Abkhazia it is customary to prepare adjika for the winter; by our standards, there is a lot of it and one person cannot cope with it. Abkhazians are very proud of their adjika and defend their authorship to Georgia.

In order to prepare this recipe in Abkhazian adzhiki we will need:
hot pepper - 30 large pods;
garlic - 1.5 heads;
salt should not be iodized, it can be rock or sea salt - 1.5-2 tablespoons;
coriander - 4 teaspoons;
cumin (jeera) - 2 teaspoons;
dill seeds - 1 tablespoon;
blue fenugreek - 2 tablespoons.

We wash and clean hot peppers from seeds and tails.
Peel and wash the garlic.
Grind the peeled pepper, garlic and salt in a blender or meat grinder and pour into a separate bowl.
Fry coriander and cumin (cumin) in a dry frying pan over low heat until an intense aroma appears.
Pour into a cold container, because... Spices may burn in a hot frying pan.
Add dill and fenugreek seeds and grind everything together in a coffee grinder for 10-15 seconds. The grind should not be very fine. If you want, you can do this procedure in an ordinary mortar.
Combine the ground spices with ground hot pepper, garlic and salt.
Stir until thickened.
Packed in advance prepared jars.
Close with lids.
