The main advantage of the ancient eggplant adjika recipe offered today is its simplicity. My proven recipe with step-by-step photos is at your service. I note that today I will make the preparation in a slow cooker, but, in principle, everything can also be done in a regular cauldron or saucepan.

We will need the following products:

  • eggplants – 3 kg;
  • tomatoes – 3 kg;
  • bell pepper – 10 pcs.;
  • garlic – 2 pcs.;
  • vegetable oil – 200 ml;
  • vinegar – 100 ml;
  • salt – 3 tbsp. l.;
  • sugar – 3 tbsp. l.

Rinse the eggplants thoroughly with running water and cut into several pieces. Grind the chopped parts using a food processor.

Wash the peppers, remove seeds and stalks. Grind it in a food processor.

Next, let's move on to the tomatoes. Vegetables must be washed and passed through a juicer. As a result, you will get tomato juice without seeds and peel.

Pour sunflower oil into the multicooker container.Add tomato juice and pepper to it. Select the “Cook” function in the menu and set the cooking time to 10 minutes.

After 10 minutes, add chopped eggplants to the mixture of pepper and tomato juice. On the multicooker panel, select the “Stew” section. Set the cooking time to 40 minutes.

Add sugar, vinegar, salt and garlic passed through a garlic press to the boiled vegetable mixture.
