Fragrant blackcurrant juice for the winter - a classic homemade fruit drink recipe
Blackcurrant juice is an amazing opportunity to preserve the aroma of this wonderful berry until winter. Many people make jam, jelly, or compotes from currants. Yes, they are very tasty and healthy, but they have no smell. One could be upset, but why, if it is possible to preserve the taste, benefits, and aroma for the winter.
Currant got its name from the Old Slavonic word “currant”. Back then, this word meant a strong and pleasant smell. You have noticed that everything in currants smells, the berries, the leaves and twigs, and if you try, you can preserve this aroma for a long time.
To prepare blackcurrant juice, take:
- 2 liters of boiled chilled water;
- 0.5 black currants;
- 1 cup of sugar.
Wash the berries. It is not necessary to pick them off the branches if you do not plan to use the pulp for cooking. marshmallows, or marmalade.
Place the berries in a glass bowl and pound them with a wooden pestle. Try to limit contact of the berries with metal objects. Because of this, they oxidize and lose some of their beneficial properties.
Squeeze the blackcurrant juice through a sieve or cloth. For now, put the juice aside, and put the pulp in an enamel pan and fill it with cool boiled water. Pour sugar into the water and place the pan over low heat. Bring the water with the cake to a boil and boil for 3-5 minutes.
Remove the pan from the stove and cool slightly.Strain the resulting “compote” and combine it with the juice.
To avoid fermentation of fruit juice, it must be pasteurized. This must be done very carefully so as not to lose the blackcurrant aroma.
Wash the liter jars and pour boiling water over them. Pour blackcurrant juice into them, almost to the very top.
Take a saucepan with a wide bottom, place a kitchen towel on its bottom and place jars of fruit juice in the saucepan. Make sure that the jars stand tightly and do not dangle. Cover the jars with lids and pour warm water into the pan, up to the shoulders of the jars. Place the pan on the fire and be patient, have a thermometer and a seaming wrench. After the water boils in the pan, monitor the temperature of the fruit drink in the jars from time to time. The fruit drink needs to be heated at a temperature of +80 degrees for about 10 minutes.
Very carefully reduce the heat under the pan, remove the jars and immediately roll up their lids.
