We are starting to master the preparation of mash. You need to pour 5 liters of birch sap into an enamel container. Add 1.6 kg of sugar, stir and put on fire, stirring until the sugar is completely dissolved.
Keep on fire, skimming off the foam, until a third of the juice has evaporated. Then strain the hot juice through a loose cloth into the barrel.
When the juice has cooled to 40 degrees, add 2 tablespoons of yeast and 1 liter of vodka. Cut two lemons into slices, remove the seeds and also place in a barrel.
Leave the barrel with its contents in a warm place for 10-12 hours for fermentation. As soon as fermentation becomes active, take the barrel to a cold place for a month and a half.
After this, strain the birch mash and pour it into champagne bottles, capping and securing with wire. Place bottles of mash in the cellar and store them in a lying position.
