Lingonberry juice - summer freshness for the winter: how to make lingonberry juice at home
Lingonberry has many beneficial properties, but alas, its growing area is quite small. Most often, we can see these healthy berries not in the forest, not in the market, but in the supermarket, in the frozen food department. However, there is no need to be sad, because freezing does not harm the berries in any way and lingonberry juice, even if it was frozen, turns out no worse than fresh one.
To prepare lingonberry juice you need:
- 1 kg of lingonberries;
- 6 liters of water;
- 0.5 kg sugar;
- Lemon, mint - optional.
Defrost lingonberries naturally. There is no need to wash it, because it was already washed before freezing. If you have a fresh berry, then it wouldn’t hurt to rinse it with warm water.
Next, there is a nuance. Lingonberry juice is quite specific and it does not like contact with metal. Try to work quickly so it doesn't have time to oxidize, and if possible, use ceramic cookware.
Grind the berries and squeeze the juice from them. You can use a sieve or a piece of gauze.
For now, pour the juice into a clean jar and place it in the refrigerator.
Fill the remaining cake with water and add sugar to it. Place the pan with the cake on the stove and bring it to a boil. As soon as the water boils, remove the pan from the stove, cover it with a lid and let the pan cool to room temperature.
Strain the pulp through cheesecloth and mix the broth with pure juice.
To preserve lingonberry juice for the winter, it needs to be pasteurized, because boiling it is not very good.
Pour the prepared fruit drink into bottles or jars.
Place the lids on the bottles and place them tightly in a wide-bottomed saucepan.
Fill the bottles with hot water, adding 2-3 cm to the top of the bottle.
Turn on the heat under the pan and from the moment it boils, pasteurize the lingonberry juice for 15-20 minutes.
After this time has expired, remove the bottles from the water, put them in a cardboard box and wrap them in a warm blanket for 8-10 hours.
Lingonberry juice is quite “capricious” in storage, therefore, try to maintain sterility when preparing it and adhere to the recipe.
There are many ways to preserve lingonberries for the winter. If you are afraid to prepare fruit drinks, dry the lingonberries, or cook from it marshmallow. It is no less tasty and healthy.
