There are many recipes for preparing delicious boiled pork at home, but this method is special, one might say universal. This meat can be eaten both hot and cold.

Let's start cooking the meat: wash a lean piece of pork weighing 1-2.5 kg in lukewarm water and dry with a napkin. To add flavor to the meat, you need to make cuts on it with a knife, and then stuff it with finely chopped onions, garlic and spices mixed with salt. Suitable spices include lemon balm and ground black pepper.

Next, you need to fry the meat over high heat on all sides to close the exit of juices from it. To do this, pour refined sunflower oil into a stainless steel bowl with a lid that closes tightly to a height of 2 cm or more. You shouldn’t skimp on the oil, because after cooking the meat, you can use it to make other dishes. Heat the pan with oil very hot. To find out if the oil is hot enough, dip a slice of raw potato into it. If it starts to brown, the oil is ready. Place the whole piece of meat in it and fry on all sides until golden brown.

Then, pour 0.5-1 cup cold water into the pan with the meat. How much water to add depends on the size of the piece of meat and the size of the pan.It is recommended to take enough water so that it does not completely boil away while the meat is being cooked.

Important! Water should be poured cold. If you pour boiling water into hot oil, the liquid will begin to splash strongly in all directions and you can get burned by the steam.

After adding cold water, bring the pan with meat to a boil, close the lid tightly, reduce the heat and simmer for the allotted time.

The time for stewing should be calculated using the formula: 40 minutes are needed to stew the meat, plus add 20 minutes per 1 kg of meat. For example, if you have a piece of meat weighing 2.5 kg, then you need to simmer for 40 minutes + 50 minutes, for a total of 90 minutes. But, if you want to get even softer meat, then you can add another 20-30 minutes for stewing.

It is better not to open the lid until the end of cooking, so that the steam does not evaporate and the temperature does not change during stewing.

Meanwhile, while the meat is cooking, collect spices to sprinkle on it. This is, first of all, salt and sugar (half the amount of salt). Add ground spices to them: red, black and allspice, nutmeg, dried herbs (dill, parsley), meat seasoning or other seasoning you like.

After the allotted time has passed, turn off the heat, remove the meat from the pan onto a large deep plate, previously covered with foil, in the form of two strips folded crosswise. Quickly sprinkle it with the prepared spices and wrap it tightly, still hot, with foil.

Important! If we are preparing boiled pork from frozen meat, then we do not need to defrost it, but immediately fry it in hot oil without stuffing it with spices. Such boiled pork will turn out even juicier and more tender than from fresh meat.

There are two options for eating this meat: hot and cold boiled pork.

  1. Hot boiled pork is especially tasty. Unwrap the boiled pork wrapped in foil after 30-50 minutes, the time depends on the size of the piece, and place it on a heated dish, cut into portions with a sharp knife, decorate and serve. You can serve it as a whole piece, and cut slices of boiled pork as needed. With the second serving option, the meat will retain heat longer.
  2. Cold boiled pork is served along with a cold appetizer. At the same time, let the meat cool in foil and place it in the refrigerator. When necessary, cut into pieces, and leave the rest of the meat again wrapped in foil in the refrigerator. This way it can be stored for 3-4 days.

The liquid in which the meat was stewed should not be allowed to disappear either. After cooling, place the pan with the contents in the refrigerator. After some time, we take it out: a dense, tasty jelly has formed at the bottom, and soft fat on top. The jelly can be eaten as jellied meat, or you can use it to make soup or gravy. Fat is also suitable for seasoning other dishes.

Delicious homemade boiled pork is a decoration for any table. From cold boiled pork you can quickly prepare sandwiches for breakfast, as well as various meat dishes and serve with a side dish. So, a housewife can easily prepare, for example, boiled pork fried in butter or boiled pork fried in batter. You can serve porridge or potatoes as a side dish for this meat.
