Whole salted mackerel can be quickly prepared at home when you have this simple recipe on hand. Having fresh or frozen fish, you can easily salt it yourself and it will turn out very, very tasty. Therefore, for everyone who wants to, I’ll tell you about the intricacies of this process and about quickly salting mackerel without brine.
How to quickly and deliciously pickle whole mackerel.
The initial stage of dry salting is to thoroughly clean two large fish, weighing up to a kilogram each, remove the entrails and rinse thoroughly so that the water remains practically clean.
Let's wait until it drains and put it in a container that can accommodate both fish.
Distribute two and a half tablespoons of salt evenly between the two pieces and rub the salt onto the outer surfaces and inner parts of both fish.
Cover the container with salted fish with a clean sheet of paper and take it to a cool place. Keep in mind that if you place salted fish directly in the refrigerator, this may negatively affect the smell and even the taste of other products in there. Therefore, it will be better if you have a cold storage room or other similar room. If you still use the refrigerator for this purpose, then cover the container with the fish preparation with a lid.
On the third day of salting, you can drain the resulting liquid and salt again with two teaspoons of salt, evenly distributing it over all surfaces. Set aside for another 5-6 days until ready.
Next, the finished mackerel is cleaned of excess salt.
The flesh is cut along the spine with a sharp knife and the spine with the abdominal bones is removed.
Carefully remove the skin from the resulting halves of the fish carcass and cut them into pieces, placing them in a special dish for fish.
