Blackcurrant grated with sugar for the winter
Like many housewives, I am of the opinion that it is most useful to prepare berries for the winter as raw jam. At its core, these are berries ground with sugar. In such preservation, not only vitamins are completely preserved, but also the taste of ripe berries remains natural.
I am pleased to share my homemade method for making this raw blackcurrant jam. For the convenience of readers, each stage of preparing a vitamin treat can be seen in the photo.
Proportions of required products:
- black currant berries – 2 kg;
- sugar – 4 kg;
- citric acid – 20 gr.
How to grind blackcurrants with sugar
To make such a preparation from raw berries, only ripe, unbroken or undamaged fruits are suitable. Spoiled berries can provoke fermentation in the finished jam. Therefore, first we need to carefully sort out the currants and remove the remains of leaves and twigs from them.
Then pour the berries into a colander (or a sieve) and rinse under running cold water.
The washed berries must be dried on a paper towel.
Don’t be too lazy to do this, because due to excess moisture, raw jam can also ferment.
We need to either grind the dried black berries into a meat grinder, or, as I did, grind them into a paste using a powerful blender.
Before adding berries to the blender, make sure the bowl is clean and dry.
Next, put the berry puree into a saucepan, add sugar and stir.
The sugar in the berry will not completely dissolve immediately. Therefore, before packing into jars, we leave them for three hours at room temperature.
After this, mix thoroughly again.
During this time sterilize jars and lids. How this procedure can be done simply - look at the photo.
We will pack the jam with a ladle, previously scalded with boiling water.
Sprinkle the top of the filled jars with citric acid crystals.
This is done to prevent raw jam from spoiling longer.
Cover the jars with plastic lids and put them in the refrigerator.
You can keep them in this form for a year.
I simply spread delicious and vitamin-rich black currants, grated with sugar, onto thin slices of bread and serve them with my family for tea. This thick, raw jam is delicious with pancakes or pancakes.
