The main secret of making jam according to this recipe is very simple - the berries need to be picked before they ripen (3-4 days before). If the berries are small, they can be cooked directly with the seeds; if they are large, the seeds must be removed using a small pin, making a cut in the top part of each berry.

Ingredients of the jam: gooseberries - 1 kg, sugar - 1.5 kg, water - 2 cups, vanilla - a pinch.

How to make gooseberry jam

Divide the sugar into 2 parts, prepare syrup from one of them, divide the second into 3 parts and leave for now.

We remove the stalks from the gooseberries, wash and prick each berry, then fill them with hot syrup and leave for 4-6 hours (the time depends on the size of the berries).

Then drain the gooseberries in a colander.

Add a third of sugar to the syrup, boil for about 7 minutes, add berries and leave for 5-6 hours.

We carry out this procedure 2 more times. At the very end, add vanillin.

Now, the jam can be poured into sterilized jars and roll up.
