First of all, we need apricots. It is better to take overripe ones, as they will be juicier and sweeter.

We take no more than 10 kg, this is the only way to prevent burning.

When preparing, the following proportions must be observed: for 10 kg of apricots, take 1 glass of water and from 1 to 5 kg of sugar (depending on how you like it).

The apricots need to be washed, sorted, removing damaged ones, since they are not suitable for us, and then dried (you can simply let the water drain).

After that, divide into halves. The seeds must be removed and damaged areas cut out.

We put what we have selected into a basin, add a small amount of water and cook, remembering to stir constantly.

When the apricot mass begins to thicken, you can add a little sugar and continue cooking until cooked. It will take an hour or an hour and a half. All this time, be sure to remember to continue stirring. There is no need to cook with sugar for a long time, because... the jam will begin to darken and the final product will not retain its beautiful and rich orange color.

Before pouring the finished apricot jam into jars, the container must be prepared: it must be washed, dried and heated.

As soon as the jam is packaged, the jars must be rolled up immediately; for this, the lids must already be prepared. Then cool everything.
