Ingredients: 1 kg cherries, 150 gr. sugar, 100 ml. water.
Wash the cherries, remove the seeds, add water, heat (do not boil), pressing down with pressure (any heavy object, stone). Squeeze juice from softened berries. Pour the juice into bottles and roll up. Boil the berries. Add sugar and simmer over low heat for 30 minutes. Pour into hot jars and cool. Sprinkle with sugar (preferably powdered sugar), roll up. Hide it in the basement.
Cherry juice is very concentrated and sour. When using it, you can dilute it with a little boiled water and add sugar to taste. The jam is dense and of good consistency, ideal for sponge rolls.
