- watermelon rinds - 1 kg;

— sugar — 1.5 kg;

- water - 4 glasses.

The watermelon rinds remaining after the meal must be thoroughly peeled from the pulp without touching the white-green skin, and then cut into cubes.

Now, put a pan of water on the fire, put the crusts in there and cook until soft.

Once they are soft, remove them with a slotted spoon and place them in the hot syrup. Let them soak in sugar for 10-12 hours. It will be ideal if you have the opportunity to leave the watermelon rinds overnight, and in the morning boil them directly in the syrup for about ten minutes. Then let them stand again.

Such operations must be done until the white pulp becomes transparent.

When the candied fruits are ready, add a pinch of vanillin and a teaspoon of citric acid to the syrup and let stand for another 5-10 hours.

Then, place in a colander and let the excess syrup drain.
