Candied fruits made from pumpkin and orange peels are an excellent dessert for tea. For children, this dish replaces candy - tasty and natural! My step-by-step recipe with photos will tell you in detail how to make candied pumpkin and orange peels at home using an electric dryer for vegetables and fruits.
To prepare such a preparation you will need a very small set of products. At the initial stage it is: pumpkin, granulated sugar and orange. For 1 kilogram of pure vegetable mass you will need 800 grams of granulated sugar and 1 fruit.

How to make homemade candied pumpkin and orange peels
Cut the pumpkin in half and remove the seeds. The seeds can then be washed and dried.
Peel each pumpkin slice from the hard peel and cut into pieces 2-3 centimeters in size. The cuttings need to be weighed, since the calculation of the remaining products will be per kilogram of pumpkin. In my case, I got exactly 2 kilograms of pumpkin, so I will use all the necessary products in double quantities.
Place the slices in a pan of a suitable size and add 400 grams of sugar. For 1 kilogram of pumpkin you need 200 grams of granulated sugar, but in my case this amount was doubled.
Cover the saucepan with a lid and put it in the refrigerator for 10-12 hours. To make the sugar disperse better, after 2-3 hours the contents of the pan can be stirred. I usually make the preparation in the evening, and in the morning I continue preparing candied fruits.
After the specified time, open the lid and see that the pumpkin syrup has almost completely covered the pieces of the future delicacy.
Using a slotted spoon, place the pumpkin in a separate bowl.
Add 1.2 kilograms of sugar to the syrup (600 grams per 1 kilogram of pumpkin).
Place the pan on the fire and bring the syrup to a boil.
In the meantime, let's get to the oranges. I will need 2 of them. Cut the fruit into 4 parts, and then carefully peel each part. We separate the pulp into slices, and cut the rind into long strips, 5-6 millimeters thick. Zest is also future homemade candied fruit.
Place an orange into the boiling syrup.
Next we put the pumpkin pieces.
Bring the contents of the saucepan to a boil and cook for 5 minutes. After this, close the pan and leave on the stove until it cools completely. Bring the cooled syrup with pumpkin and oranges to a boil again and cook for another 5 minutes. In total, the five-minute cooking procedure must be repeated 3 times.
After the last boil, the food in the pan looks like this.
Place the pumpkin with the zest on a sieve and let dry for 2-3 hours.
Remove the remaining boiled orange pulp.
How to dry homemade candied fruits in an electric dryer
When the pieces of pumpkin with orange peels are sufficiently rounded, turn on the dehydrator for vegetables and fruits. Set the temperature to 70 degrees and let it warm up for a few minutes.
In the meantime, fill the grates with products.
The zest should be placed separately from the pumpkin, as it dries much faster.
Place the pumpkin pieces at some distance from each other.
After 5 hours of drying, the candied orange peels can be removed from the dryer.
It will take 10 hours for the pumpkin to dry. There is no need to overdry the candied pumpkin fruits; let them be a little soft.
The finished treat can be rolled in powdered sugar.
It turns out so beautiful and tender. 🙂
If you plan to give these delicious natural “sweets” to children, then it is better to do without excess sugar and leave the candied fruits without sprinkles.
You can store such homemade candied fruits in plastic containers under an airtight lid. If the resulting volume of natural delicacy is too large, then some can be frozen in the freezer.
