And so, to make tomato ketchup we need to have:
tomatoes - 1 kg;
red bell pepper - 300 gr;
onion - 300 gr;
garlic - 1/2 head;
hot pepper - 1/2 medium-sized pepper;
ground black pepper - 1 teaspoon;
basil - 1 teaspoon;
coriander - 1 teaspoon;
ginger - 1 teaspoon;
vegetable oil - 100 g;
sugar - 5 tablespoons;
salt - 2 teaspoons (heaped);
vinegar 9% - 3 tablespoons.
To prepare homemade tomato ketchup, we start by placing a deep, non-enamel pan on the fire.
Pour in vegetable oil.
Add coarsely chopped garlic, hot pepper and spices.
Fry, stirring for 30-40 seconds.
Add peeled and chopped onion, red bell pepper and tomatoes.
Mix. Cover with a lid and leave on medium heat for 30 minutes.
Mix everything with a blender directly on the stove until a homogeneous tomato mass is formed.
Add salt, sugar, vinegar and mix.
Let it boil and reduce the heat.
Cook over low heat, stirring occasionally, until the volume of the tomato mass is reduced by half.
ATTENTION: do not forget to stir while cooking so that the ketchup does not burn!
Homemade tomato ketchup is packaged hot in pre-prepared jars and twist it.
