Homemade tomato adjika, spicy, recipe for the winter - step by step with video

Adjika is a paste-like aromatic and spicy Abkhazian and Georgian seasoning made from red pepper, salt, garlic and many aromatic, spicy herbs and spices. Each Caucasian housewife has her own set of such spices.

If adjika is made from red pepper, it has a red color. If it's green, then it's green. Tomatoes are not part of the classic Abkhazian or Georgian adjika. But here we will give a recipe for homemade tomato adjika. This or a similar recipe for “Adjika from tomatoes” is now in the homemade arsenal of almost every housewife.

A simple recipe for making adjika from tomatoes.

To prepare it at home we will need:

tomatoes - 2.5 kg;

carrots - 1 kg;

sweet pepper - 1 kg;

sour apples - 1 kg;

bitter red pepper - 1-3 pods;

sunflower oil - 1 cup,

sugar - 1 glass;

vinegar - 1 glass;

salt - 1/4 cup;

garlic - 200 gr.

Preparation of adjika:

Wash tomatoes, carrots, sweet peppers, apples and hot red peppers, peel them and pass through a meat grinder.

Place the ground vegetables in an enamel bowl of suitable size and place on the fire.

Cook over low heat for one hour, stirring regularly.

After an hour, add chopped garlic, salt, sugar, vinegar and sunflower oil.

Stir and let it boil and cook for 5 minutes after boiling.

We lay out our adjika in advance prepared jars and cover with a lid, but do not screw it on.

Filled with adjika we sterilize the jars in a pan of the desired size for 10-150 minutes.

Take it out and roll it up.
