How to make boiled pork in the oven.
Take a fresh pork butt from the hind leg. Separate the leg from it by running the knife strictly along the connecting joint. Next, cut the ham lengthwise so that when you unroll it you can see the two inner bones. Using a thin small knife, trim the upper pelvic bone on all sides, and then remove it. The bone that is located below can be left in place - it is very difficult to cut out without damaging the fat layer and the upper skin.
Turn the ham prepared in this way with the skin facing you and make small cross-shaped notches on it. Rub the ham with the following mixture: salt – 100 grams, ground pepper – 25 grams, garlic – 5 grams. This amount of seasoned salt is enough to salt 5 kilograms of meat, so be sure to weigh it before grating the ham.
Place the ham on a deep sheet and place it in the preheated oven and bake at medium temperature. Place the meat so that the cut skin is on top.Bake the ham in the oven for at least six hours - during this time it will be fully cooked and golden brown. Remove the ham from the oven, cover with foil and let cool completely.
The finished baked pork is stored in a cool place, preferably, of course, in the refrigerator, wrapped in parchment or a canvas napkin.
