Homemade doctor's sausage - classic recipe and composition, according to GOST.
Cooking classic doctor's sausage at home, if the technology for producing boiled sausages is followed, is within the power of any careful and patient housewife. For everyone who strives to feed their loved ones healthy, high-quality and tasty, I am posting a recipe for the classic “Doctor’s” sausage, developed back in 1936 and which gained popularity among the entire Soviet people.
The composition of Doctor's sausage is simple:
- Beef meat (highest grade) – 250 g;
- Medium fat pork meat – 700 g;
- Chicken egg – 1 pc.;
- Cardamom or nutmeg (ground) – 0.5 g;
- Glucose, fructose or granulated sugar – 2 g;
- Sodium nitrate (sodium nitrate) – 0.07 g (an ingredient that does not benefit the body, but if it is not added, the sausage will be earthy gray in color.)

Let me just say that this homemade doctor’s sausage keeps well in the cold. But in our house this time is reduced to a minimum, because it is eaten very quickly, because natural sausage is very tasty, juicy and appetizing.
