Khrenovina is a dish that came to our table from cold Siberia. In essence, this is a spicy basic preparation that can be varied to suit your taste or consumed in its pure form. Siberians, for example, love to mix it with thick sour cream or mayonnaise and eat it with hot dumplings. You can try this option too.

How to make horseradish for the winter without cooking.

For a spicy Siberian preparation, take 3 kilograms of tomatoes, 250 grams of fresh horseradish root and 250 grams of peeled garlic cloves.

Cut the tomatoes into slices, horseradish into pieces, leave the garlic as is.

Grind all the components of the horseradish through a meat grinder, mix the mixture thoroughly and pour into a jar with a tight lid.

Place the jar with the spicy preparation on the bottom shelf of the refrigerator and “forget” about it for a week.

After seven days, when the horseradish has infused and all the flavors in it have mixed, you can taste it. To taste, add salt, any ground pepper, vinegar and sugar to the base mixture. Instead of the last two ingredients, you can put a grated Antonovka apple into the horseradish. If you don’t want to enrich the product with extraneous flavors, then just add some salt. For horseradish, you can use tomatoes of any ripeness, even green ones. But make sure that at least a third of them are ripe enough.

This horseradish appetizer stores well in the refrigerator and does not require sealing.

Preparing horseradish at home in large quantities makes it possible in winter to separate a little of the preparation into a separate jar and enrich it each time with different flavors just before serving.
