Many housewives want to know how to prepare squash caviar at home so that you get delicious squash caviar for the winter, just like they sell in the store. We offer a simple and very tasty recipe. To prepare caviar, you can take zucchini either young or already fully ripe. True, in the second case you will have to peel the skin and seeds.

So, how to prepare squash caviar at home? To prepare we will need:

peeled zucchini - 3 kg;

onions - 1/2 kg or 11-12 pieces of medium size;

full-fat mayonnaise - 250 gr.;

tomato paste - 125 gr.;

salt - 2 teaspoons (heaped);

sugar - 1.5 teaspoons (without a slide);

vinegar 5% - 2 tablespoons;

ground black pepper - 1 teaspoon;

water - 1.5-2 cups (depending on whether the zucchini is young or ripe)

Preparation of squash caviar:

Wash the zucchini and onions, peel and pass through a meat grinder.

Place everything in an aluminum pan or large cauldron.

Add water and put on fire.

After boiling, cook for an hour under a closed lid, stirring.

Add mayonnaise, tomato paste, salt, sugar, ground black pepper and vinegar. Mix.

Cook with the lid closed for another 1.5 hours, stirring constantly.

Lay out in sterilized jars, cover with lids and tighten.

Turn it upside down, cover it with a blanket and leave it until it cools completely.

Homemade preparations made for the winter were replenished with jars of squash caviar prepared at home, and the caviar tasted just like store-bought caviar.
