Lyutenitsa is a dish from Bulgarian cuisine. It got its name from the Bulgarian word “fiercely”, that is, very sharply. This is how it is because of the hot pepper. Bulgarians prepare lyutenitsa not in the house, but in the yard, in large containers. You cannot eat it right away; the dish must sit for at least several weeks.

For 5 kg of sweet red pepper we take 2-3 pods of hot pepper, 7-8 pcs. tomatoes, 10-15 g garlic, 20 g celery, salt and sugar to taste, 200 ml sunflower oil.

Wash the tomatoes, fleshy red sweet and bitter peppers, remove the seeds and stalks from the peppers, cut them into pieces, put them in a saucepan, add a little water to the vegetables and cook until they become soft. You can also bake the peppers in the oven.

It is believed that properly prepared lyutenitsa should be homogeneous without seeds. Therefore, we rub the vegetables through a sieve and continue to cook the mixture until thickened.

At the end, add salt, sunflower oil, sugar, finely crushed garlic, chopped herbs.
