Homemade Lenten Vegetarian Pea Sausage

Lenten vegetarian sausage is made from the most common ingredients. At the same time, the final product turns out to be very tasty and original, and it is very easy to prepare it yourself at home.

How to make vegetarian sausage from peas.

Boil two cups of pea flakes by pouring four cups of hot water over them. As a result of ten minutes of cooking, you should get a tender pea puree. If you couldn’t buy flakes, then cook regular dry peas. Pre-soak it in cold water. This stage will take about six hours.

Afterwards, cook the peas until soft and drain off the excess water; pour 100 ml of vegetable oil into the pan with the boiled flakes or whole peas. Simmer the pea mixture with butter for another 5 minutes.

Now, additionally blend it with an immersion blender.

Season the hot pea puree with two teaspoons of salt, a pinch of nutmeg powder and two teaspoons of ground pepper. Also, add ground coriander seeds (2 teaspoons), finely chopped garlic (6 cloves) and onions (2 pieces) to the base for lean sausage.

To make the sausage look nice, it needs to be tinted.For this, freshly squeezed beet juice is suitable, pour three full tablespoons into the minced meat.

Homemade Lenten Vegetarian Pea Sausage

Blend the prepared mixture again with a blender and fill the plastic mold with it. Make a mold from an empty mineral water bottle, cutting off the bottom and the top part where the lid was. Before filling with minced meat, lightly grease the inside of the prepared bottle with vegetable oil. Place the minced meat in the mold while it is still warm and pliable.

Wrap the filled bottle tightly with cling film so that the cut ends are closed and the minced meat does not fall out through them.

Once the bottle is cold, place it in the refrigerator and allow the sausage to harden completely.

Remove the finished vegetarian sausage from the bottle container by first freeing it from the film, and then cutting the rest of the bottle lengthwise to the very end.

Wrap homemade lean sausage in parchment paper and store in the refrigerator. If necessary, cut off slices from it and make sandwiches with them, or use the delicious sausage as a cold snack, garnished with fresh herbs.
