How to cook raw beef stew in jars.
We start making the preparation by cutting the meat. It is this moment that is one of the advantages of this method of cooking stew. Meat can be cut into pieces of different shapes and sizes into each jar. For example: squares of different sizes, rectangular bars or just large pieces. When cooking raw meat simply in jars, it will not crumble and will retain its shape well, which will make it possible to make a variety of dishes and gravies from the preparation.
There are two techniques for making such canned meat. Each has two versions.
The first method of preparation begins with the fact that chopped raw meat of one shape, sprinkled with salt (15-20 g of salt per 1 kg of meat), is tightly placed in jars without adding 1-2 cm to the very top and poured:
in the first version - just cold water;
in the second - pre-cooked unsalted broth.
In the second version, the finished beef stew will be more gelatinous.
The second method of preparing the preparation involves putting raw beef meat, unsalted, into jars and pouring salt water (20 g of salt per 1 liter of water) or, in the same proportion, salted and cooled, previously cooked broth.
Such canned raw meat takes a long time to sterilize – at least 7-8 hours.
Raw beef stew is perfect in winter for stewing, frying, quick cooking of soups, goulash, and roasts.
Preparing a full meal using this beef stew will not be difficult even for a person who is not particularly good at cooking.
