Homemade cherry liqueur with vodka - without seeds, but with leaves
In the summer season, you can make not only jam, compote or preserves from ripe pitted cherries. For the adult half of my household, I always prepare a very tasty cherry liqueur with a unique aroma and an amazing sweet and sour aftertaste.
The recipe is very simple, you don’t need a lot of ingredients to make homemade cherry liqueur, and step-by-step photos will help you not to go astray.
Ingredients:
• cherries (preferably black rind) - 1 kg;
• vodka (40%) – 500 ml;
• water – 700 ml;
• cherry leaves – 20 pcs.;
• sugar – 300 gr.
How to make cherry liqueur at home
First, we wash the cherries under running water, discard the spoiled fruits and remove the seeds using any available method.
Then, put the berries in a saucepan, fill with cold water and put on fire. When the water boils, you need to add thoroughly washed cherry leaves to the saucepan.
Then add granulated sugar, mix and boil the mixture over medium heat for ten minutes.
During this time, sugar completely dissolves and excess water boils away.
Afterwards, turn off the gas, cover the pan with a lid and leave until it cools completely.
Using a slotted spoon, remove the cherries and leaves from the cooled mass into a deep bowl.
We need to throw away the leaves, and carefully mash the cherries with our hands so that they better release their juice to the liqueur.
The remaining liquid in the pan must be poured into a bottle, add vodka, cover the bottle with a lid and shake vigorously so that the juice and vodka are mixed.
After this, add the crushed cherries to the bottle of liqueur.
Until the cherry drink is completely ready, you need to let it brew for a month in a dark place. Once a week, the container with the liqueur needs to be shaken. This “shake” will help the cherries impart more flavor and aroma to the finished drink.
At the last stage of preparation, the liqueur must be filtered through cotton wool so that no particles of berries or leftover leaves are caught.
This homemade drink can be stored for up to two years in a tightly closed glass container. Before serving, the aromatic and tasty cherry liqueur should be cooled slightly.
I note that you can not only savor it with friends on long winter evenings. I also use this cherry liqueur to make mulled wine or as an impregnation for cake layers.
