After the water has drained, the gooseberries are cleaned. To do this, use small scissors or a knife to cut off the stalk and sepals from each berry. Using scissors in this case is much more convenient.

Method number 1 – Classic version

Take 3.5 kilograms of berries. After pre-processing the fruits, they are transferred to a saucepan with a wide bottom and filled with 3 glasses of clean water.The mixture is boiled over medium heat for about 10 minutes. During this time, the berries will soften, crack and produce a fairly large amount of juice. Place a wide metal sieve on another saucepan. The hot mass is poured onto this structure, and they begin to grind the berries with a spatula or spoon. As a result, only skins and seeds will remain in the sieve. If some of the seeds get into the preparation, it’s okay.

Introduce 1.5 kilograms of sugar into a homogeneous mass in a thin stream and place it on the fire. Constantly removing the foam, boil the jam for another 20 minutes. When hot, the product is poured into jars and sealed.

Method No. 2 – Through a meat grinder

Any amount of peeled and washed gooseberries is passed through a meat grinder with the smallest possible cross-section. The resulting puree is weighed and the same amount of sugar is added to it. Cook the mixture over low heat, stirring constantly. The jam will be ready in 30 minutes. The dessert prepared according to this recipe turns out to be very thick and aromatic.

Method number 3 - With whole berries

The stalks and dry “tails” are cut off from the gooseberries. Each berry is pierced with a sharp skewer. To do this, you can use a needle or a regular toothpick. Piercing the gooseberries will allow the fruits to better hold their shape in the finished dish. A thick syrup is boiled from half a liter of water and 1.5 kilograms of sugar. Prepared gooseberries are placed in the boiling mass. The fire is immediately turned off. Cover the pan with a lid and leave at room temperature until completely cooled.

After approximately 5 - 6 hours, the cooking process can be continued. The berries are carefully placed on a sieve, and the gooseberry syrup is heated again.The berries are again placed in the boiling syrup and allowed to brew under the lid. This procedure is repeated 3-4 times. After the gooseberries are placed in boiling syrup for the last time, the jam is not removed from the heat, but boiled for half an hour. When hot, the workpiece is packaged in sterile containers and covered with lids.

When preparing jam according to this recipe, you should take into account one important point: you cannot mix the berries! They are only shaken together with the saucepan.

Method number 4 - With oranges

For this recipe you will need 1 kilogram of gooseberries, 1 kilogram of sugar and 2 medium-sized oranges. Wash gooseberries and oranges thoroughly. It is best to go over the skin of citrus fruits with a stiff brush. The fruit is cut into large pieces, removing the seeds.

Gooseberries and orange slices are passed through a juicer. The cake after this procedure is used to cook compote. A kilogram of granulated sugar is added to gooseberry juice.

Place the mixture over medium heat and cook until tender. When the jam is ready, it flows from the spoon in a thin continuous stream. On average, cooking takes 20 – 25 minutes. The jam turns out tender and transparent.

You can also grind the products through a meat grinder. In this case, it is better to remove the zest from the orange and then peel it from the white skin so that the finished jam does not become bitter.
