After cooling, peel off the skin and cut into any pieces. If the carrot is small, you can leave it whole - the main thing is that it fits freely into the neck of the meat grinder.
Twist soft boiled carrots and pour sugar syrup.
Syrup for jam must be prepared from one kilogram of sugar, you can even use refined sugar, and 350 ml of water. This amount of syrup is required for one kilogram of twisted carrot mass.
Boil the carrot mixture filled with syrup over a fire until thick, remembering to stir constantly. To preserve as many vitamins as possible in carrots, it is recommended to cook the jam for no more than 30 minutes.
At the very end of cooking, add a pinch of citric acid or pour in a teaspoon of fresh lemon juice. To give the jam a more delicate sweet taste, you can also add orange juice.
