Five-minute strawberry jam - a quick recipe for making strawberry jam at home for the winter

No one disputes the beneficial qualities of strawberries, but everyone has their own opinion about ways to preserve all these benefits for the winter. Everyone knows that long-term heat treatment reduces the amount of vitamins in berries, but still, you can’t do without it. In order for strawberry jam to retain its aroma, vitamins and microelements, it is boiled for a very short time.

Five-minute jam has earned the right to be called a “winter preparation”, despite the fact that heat treatment is minimal. A huge contribution to this is made by sugar, which is added to the “five-minute jam” in larger quantities than to regular jam. If for regular jam you take 0.5 kg of sugar per 1 kilogram of berries, then in the “five-minute” you need to take 1:1.5, or even more.

Before making jam, strawberries need to be peeled and washed without damaging the berries themselves.

Pour cold water into a saucepan and pour the berries into it. You cannot keep strawberries in water for a long time, otherwise they will spread. Immediately take it out by the handful and put it in a colander. Try not to shake the water too much. After all, all the sand from the country settles to the bottom and it is better if it remains there.

When the strawberries have drained a little, pour them into the pan. Add sugar and now don’t be delicate, you need to grind and crush the berries as much as possible. Use a wooden spoon or potato masher.

Place the pan on the fire and bring to a boil. When the jam boils, skim off the foam and reduce the gas. Note the time - 5 minutes. This time is enough for the strawberries to cook, the sugar to dissolve, and the bacteria to die.

Divide the hot jam into sterile jars, close the lids and turn over. Let them stand with the lids down until they cool completely.

It is better to store the workpiece in a cool place, where it can stand for up to 18 months.
