Syrup can be prepared from young spruce shoots, green cones, and also from freshly picked needles.

Shoots and cones are collected in early spring. They are very easy to distinguish. The shoots grow from the very tips of the branches and have soft, light green needles. The length of such shoots should be no more than 7 centimeters.

Cones should also be harvested in the spring, when they have not yet opened. Young growth differs from old cones by tightly compressed green cups.

If time is lost and it was not possible to collect young shoots and cones in time, you can prepare syrup from pine needles. It is collected from freshly picked branches or directly from the tree. In this case, you should start preparing the syrup as quickly as possible.

Source material must be collected in places remote from highways and roads. This condition must be strictly observed, since the raw materials are not washed before processing.
