Everything is simple here! For half a kilo of berries take 400 grams of granulated sugar. Blackberries are covered with sugar and punched with a blender.After a minute of operation of the device, the berry mass will turn into a puree interspersed with small seeds. The seeds will not be removed, as they contain quite a lot of vitamins.
The sweet berry mass is left for 30 minutes at room temperature. During this time, all the sugar will dissipate and the blackberries will release juice. A fairly liquid puree is placed on the fire. It is better to choose a thick-walled cooking container. Ideally, with a non-stick coating. Evaporate the jam for 30 minutes. Keep the blackberry delicacy under control during cooking, constantly stirring it and skimming off the thick foam.
Seedless
Pour water into a wide saucepan so that it covers the bottom by 1 centimeter. As soon as the water boils, place the berries in the container. Stirring constantly, blanch the blackberries for 2 minutes. The softened hot berries with the released juice are placed on a sieve. Grind the mass using a spoon or masher. A homogeneous, seedless puree remains in the pan. Take 800 grams of sugar per liter of berry mass. If the puree turns out to be less than this volume, then the amount of sugar is also proportionally adjusted.
The mixed ingredients are left for some time at room temperature. This is necessary so that the sugar crystals completely disperse. After this, the jam is placed on the stove to boil. In total, the volume should decrease by 1/3.
Long cooking does not allow you to preserve all the vitamins in the dessert, so you can speed up the heat treatment process with the help of gelatin. To do this, you will need a 30 gram bag of gelling powder per liter of puree. It is diluted in a small amount of cold boiled water and left to swell for 30 minutes.
The blackberry mass is boiled for 10 minutes, and then gelatin is added.With constant stirring, ensure that the gelatin is completely dissolved in the jam. At the same time, jam with gelatin should not boil! In liquid form, the dessert is poured into clean, sterile jars and screwed on with lids. After cooling, the jam will have an elastic appearance.
With whole berries
A kilogram of blackberries is divided into three equal parts. 2/3 is crushed with a blender, turning into a homogeneous puree with seeds. The mass is covered with 500 grams of sugar and set to warm up on the fire. Boil the puree for 10 minutes, and then add another 300 grams of sugar and the rest of the whole berries into the cooking container. Cook the jam for another 5 minutes. From frozen blackberries
If you can’t buy fresh berries, you can use freezing to make jam. These blackberries do not require any preliminary preparation; you can start cooking right away. Blackberry jam can be stored in several ways:
- In unsterile jars. This option involves packaging the finished jam in containers that have not been sterilized. This product is stored in the refrigerator for no more than 3 months.
- In a sterile container.Jars are sterilized over steam, in the oven or in the microwave. Boil the lids in boiling water for 5 minutes before screwing them on. Blackberry jam, poured hot into such containers, can be stored for a year even at room temperature.
- In the freezer. The jam is packaged in molds for freezing ice and sent deep into the freezer. After a day, the sweet cubes are removed from the molds and placed in a separate bag or container. Frozen blackberry jam can be stored in the cold for up to two years.
