How to freeze green beans for the winter
Let's collect or buy fresh green beans. The main thing is not to miss the time when the pods have already grown, but are not overripe. They should be juicy, and when pressed with a fingernail, a bright dent should remain.
Let's rinse the beans under running water and start cleaning them. To do this, cut off the sepals and long tips of the pods. Let's remove damaged instances. Cut the clean beans into pieces of 3-4 centimeters, approximately the same length.
The next step is blanching. To do this, boil water in a saucepan. Place the beans in there for 3 minutes (maximum 4 minutes).
When the pods boil, you need to remove them with a slotted spoon and immediately lower them into cold water.
To do this, water must be prepared in advance. It will be appropriate if you put ice in it. The water temperature should be minimal. This will quickly stop the oxidation of the enzymes contained in the beans. Let the lightly boiled pods sit in ice water for 5 minutes.
Next, drain everything into a colander. To dry the beans, place them on a paper towel folded several times.
Do not let the pods dry out completely. The main thing is that most of the water is glass, this will allow you to get a crumbly freeze.
