And so, a well-ripened mirabelle must be thoroughly washed and removed from the seeds.

Crush the mirabelle pulp with a porcelain pestle, transfer it to a basin and boil for five minutes.

Then, add sugar and lemon juice (for 1.6 kg of plum - 40 grams of sugar and juice from one lemon) and simmer over low heat until it becomes thick enough in your opinion.

You need to transfer the finished mousse into jars while hot.

The workpiece must be sterilized: ½ liter jars - 25 minutes, 1 liter jars - 45 minutes.

After sterilization, the preservation must be rolled up immediately.
