Mushroom caviar through a meat grinder - from fresh mushrooms with carrots and onions
September is not only the most beautiful and brightest month of autumn, but also the time for mushrooms. Our whole family loves to pick mushrooms, and in order not to forget their taste the rest of the time, we make preparations. For the winter, we like to salt, marinate, and dry them, but we especially have a very easy and simple recipe for delicious mushroom caviar, which I propose to make today.
Step-by-step photos make the recipe more clear.
The cooking method is very simple. For every kilogram of fresh, recently picked mushrooms, you need 300 grams of carrots, 300 grams of onions, one glass of sunflower oil and, of course, salt, which we add to taste.
How to cook mushroom caviar for the winter
When starting to cook, grind the mushrooms and onions in a meat grinder. We also grate the carrots, but on a grater.
Combine all ingredients and place in a saucepan.
Add oil, salt, stir everything very thoroughly, and set to simmer for 1-1.5 hours.
During this time, we remember that we need to stir so that our mushroom caviar does not burn.
After the time has passed, remove the workpiece from the stove and let it cool slightly before packaging. If you're not afraid that prepared jars If they burst, you can immediately, hot, fill the pre-prepared jars and close the lids.
For this preparation, I use small jars so that they can be opened and eaten at once. For sealing, I use screw or nylon lids, since caviar mainly overwinters in our refrigerator or cold cellar.
Ready-made mushroom caviar with carrots and onions is delicious simply to eat spread on bread, but it is no less tasty to use as a filling for pies or pizza.
