Marinated mushrooms for the winter, the recipe for which is simply called - boiling in a marinade.
This cooking method, such as cooking in a marinade, is used for pickling any mushrooms. As a result of this simple heat treatment, the mushrooms are saturated with spices and become piquant.
Wash fresh mushrooms in cold water using the immersion method. To do this, use a colander and a deep bowl.
Place the mushrooms in a saucepan and cover them with water, vinegar and salt. For each kilogram of mushrooms, take salt - half a large spoon, vinegar - half a faceted glass, water - also half a glass.
Place the pan with the poured mushrooms on the fire and bring the mixture to a boil. As soon as foam begins to appear on the surface, skim it off constantly. Cook the mushrooms for 25 minutes - during this time they will release a lot of juice and it will mix with the liquid with which you poured the workpiece.
At the moment when all the mushrooms settle to the bottom, add spices to the pan: dried bay leaf - 1 piece, dill seeds - 2 grams, peppercorns - 0.1 grams, clove buds - 0.1 grams, ground cinnamon - 0.1 grams . Also, add a little granulated sugar (10 grams) and citric acid (2 grams). Boil the mushrooms along with the spices for a couple more minutes.
Place the mushrooms in dry, sterilized jars while they are still boiling.
Cover the jars with hot lids and place in a pan of boiling water for sterilization.Keep half-liter jars in the sterilizer for 30 minutes, larger jars - longer, in proportion to their size.
After sterilization, seal the mushroom preparations and leave them to cool in the air.
This method of preparation, such as cooking in a marinade, allows you to get a tasty product that is well stored in a regular pantry all winter.
