Products:
- cucumbers – 3 kg;
- large tomatoes – 2 kg;
- sweet pepper – 1 kg;
- garlic – 200 gr;
- salt – 3 tbsp;
- sugar – 100 g;
- vegetable oil – 170 ml;
- vinegar (acid 70%) – 1 tsp. for a 0.5 liter jar;
- allspice peas – 15 peas.
How to prepare a salad of cucumbers and tomatoes for the winter
Before you start preparing the Georgian salad, you should prepare all the vegetables. Let's start with tomatoes. You need to boil water, put the tomatoes in boiling water for 10 seconds, remove with a slotted spoon.
Remove the skin from them.
Cut the peeled tomatoes into small slices.
Cut the bell pepper into 1 cm pieces, first removing the seeds and stalk.
Place the prepared tomatoes and peppers in a large cauldron or pan, pour in the prepared salt, sugar and pepper. Mix well and cook for about 20 minutes.
Cut the cucumbers lengthwise and then into “semicircles”.
Peel and chop the garlic.
Add cucumbers and garlic to boiling vegetables.Pour oil in there.
Boil for about 5 minutes.
Banks sterilize. Place the salad in sterile jars immediately after preparation. Just add 1 tsp to the jars. half a liter of vinegar. Cover with sterile lids.
Sterilize Georgian salad of cucumbers and tomatoes in jars 20 minutes. Then roll up and cool by turning the jars over.
Georgian vegetable salad is ready.
