Cold blackcurrant jam
The beginning of summer, when many berries ripen en masse. Healthy black currant is one of them. It is used to make jam, syrups, add to compotes, make jelly, marmalade, marshmallows and even purees. Today I will tell you how to prepare the so-called cold blackcurrant jam at home, i.e., we will make the preparation without cooking.
I like this recipe for simply grated black currants with sugar not only because of the ease of preparation, but also because of the ability to preserve as much as possible the vitamins that this small black berry is so rich in.
We will need:
- 1 kg of black currants without branches;
- 1.5-2 kg of sugar.
How to make cold blackcurrant jam for the winter
First you need to sort and wash the berries. Then, lay the blackcurrants on a towel to dry.
After this, we place the berries in a bowl, where we will “cook” the jam. A plastic or enamel basin is suitable for this purpose.
Add some sugar and begin to mash the berries with a wooden spoon or masher.
You can use a blender, but some of the vitamins will be destroyed due to contact of the product with metal.
Add the remaining granulated sugar. If you plan to store the workpiece in the basement or refrigerator, then 1.5 kg of sugar is enough.If you store cold blackcurrant jam at room temperature, you will need 2 kg. Stir and leave at room temperature for 2-3 days. To ensure that raw currant jam is well preserved for the winter and does not sour, the berries and sugar need to be mixed several times a day. This way you will avoid fermentation of homemade ingredients. During this time the sugar will dissolve.
After all that's done, all that's left is sterilize jars and wash the plastic lids well.
Then fill the jars with currant jam so that there is 2-3 centimeters left to the neck.
Pour sugar into the jar, the layer should be at least 1.5-2 cm thick. Close the jars with lids and put them in storage.
