The recipe for making crispy pickled zucchini is very simple, but preparing it for the winter turns out very tasty. The advantage of this method of canning is that large, overgrown specimens can be used.

We begin preparing pickled zucchini in cubes by preparing the ingredients needed for harvesting.

We will need: zucchini, garlic, currant and horseradish leaves, peppercorns and, of course, salt, sugar, vinegar.

How to pickle zucchini for the winter in jars

Once again, I note that for this preparation it is better to use large overgrown zucchini. We clean them with a knife or vegetable peeler, cut them lengthwise and remove the seeds with a tablespoon. Then, cut each half into half rings 1.5 centimeters wide. The half rings, in turn, are cut into cubes.

We wash the greens and dry them.

Peel the garlic and cut each clove in half.

In jars (I have 700 gram jars in the photo) we put half a horseradish leaf, 3 currant leaves, 3 black peppercorns and 4 cloves of chopped garlic.

Fill the jars as tightly as possible with zucchini cubes.You can involve children in this task, since assembling a mosaic of zucchini, with the goal of fitting as many of them into a jar as possible, is an exciting activity for children. Place 2 more cloves of garlic and 2 peppercorns on top.

Next, boil water and fill the jars with it. Now, you need to wait for the water to cool. This will take about 2 hours.

When the water in the jars becomes a little warm, pour it into a separate container. We measure the amount of drained liquid by pouring it into the saucepan in which we will prepare the marinade, using a measuring cup. The total amount of brine should be 1750 grams (7 glasses of 250 grams each). Add regular water to the missing volume of the future marinade. Add 2 tablespoons of salt, 3 tablespoons of sugar and 150 milliliters of 9% vinegar.

As soon as the brine boils, turn it off and pour it into a jar of zucchini.

Twist the workpiece and place it in a warm place until it cools completely.

This amount of marinade is enough for four 700 gram jars or three liter jars.

Crispy pieces of pickled zucchini can be cut into salads or eaten as a separate snack. Pickled zucchini slices prepared for the winter are stored in any cool place all winter.
