For lovers of “blue” ones, there is an excellent and affordable homemade recipe - eggplant caviar. Eggplants prepared in this way, with tomatoes and onions, will be an excellent appetizing cold appetizer in winter. After all, canned caviar is a tasty and healthy cold appetizer.
To prepare caviar we will need:
— Eggplants – 1 kg.
— Tomatoes – 600g.
- Onions - 400 - 500g.
- Salt - add to your taste.

And so, wash the “blue” ones and chop them into small cubes.
Then lightly brown them in vegetable oil.
“Strip” the onion and finely chop it with a knife, as if for frying.
We also cut the red tomatoes into small cubes.
We put all our prepared ingredients for caviar into a deep bowl and, adding salt to taste, mix. If you like your appetizer spicy, you can add a little red pepper.
Bring the resulting mixture to a boil, stirring constantly and gently.
We will put the still hot preparation into clean jars and set it to sterilize. Half-liter jars: 40 – 45 minutes, and liter jars – about an hour.
After sterilization, roll up with metal lids.
