In our family, we really don’t like to use vinegar when preparing food for the winter. Therefore, you have to look for recipes without adding this not entirely healthy ingredient. The recipe I propose allows you to make caviar from zucchini without vinegar.

Besides this obvious advantage, in this recipe I found one more thing I was looking for. Squash caviar tastes and looks like store-bought caviar, but you can make it easily and simply at home. My simple recipe with step-by-step photos describes and illustrates the preparation well.

To prepare squash caviar we will need the following ingredients:

  • 2-3 medium zucchini;
  • 2 carrots;
  • 3-4 onions;
  • 3-4 cloves of garlic;
  • 3-4 tablespoons of tomato paste;
  • vegetable oil for frying.

How to make squash caviar for the winter without vinegar

When preparing the product, all ingredients must be thoroughly washed and cleaned. If young zucchini is used, then the seeds do not need to be removed, this will save time and will not affect the taste.

Zucchini needs to be cut into cubes.

You can cut the onion into large pieces, it will be faster.

You can grate the carrots on a coarse grater, or cut them into pieces like I did. See for yourself and do what is convenient for you.

Pour a little vegetable oil into a well-heated frying pan and lightly fry the onions and carrots.I fry them separately as they have different frying times. Also, lightly fry all our zucchini. You shouldn’t fry them too much, we have quick caviar, and there’s no need for that, the main thing is that the zucchini becomes soft.

Place all the fried ingredients for squash caviar in a large saucepan, add salt and pepper.

Simmer over low heat for 50 minutes, stirring frequently.

After 50 minutes, add finely chopped garlic and tomato paste.

And again boil everything thoroughly for 10 minutes.

In order for our game to become like in the store, velvety and homogeneous, it needs to be whipped with an immersion blender.

Afterwards, you need to boil it again, otherwise the jars with our even quick caviar will not stand in the winter and will spoil.

While our squash caviar was boiling, we needed to wash and sterilize banks. It’s convenient for me to do this in the oven, it saves a lot of time, but we need to quickly roll the caviar. 🙂

Place the caviar into clean jars and seal with clean and sterile lids.

That’s it, our homemade squash caviar without vinegar is ready for storage. You need to wait until it cools down and put it in a cool place where it will be preserved.

This amount of ingredients yields approximately 5-6 0.7-liter jars of caviar, so you can safely take a double portion of the products, which is what I did.
