Zucchini salad, Uncle Bens recipe, is very easy to prepare. There's no need to fry anything here. The main thing that will take some time is preparing the necessary vegetables. To prepare this delicious zucchini salad for the winter we will need:

peeled zucchini - 2 kg,

bell pepper - 5 pieces,

onions - 10 pcs.,

tomatoes - 10 pcs.,

water - 1 liter,

vegetable oil - 250 g,

tomato paste - 250 g,

sugar - 250 g,

salt - 2 tablespoons,

vinegar 9% - 2 tablespoons.

If desired, you can add:

garlic - in any quantity, to taste,

hot pepper or ground pepper.

Zucchini salad for the winter from the specified Catholic products makes about 5 liters.

And how to prepare a salad of tomatoes and zucchini.

Wash the zucchini, peel off the outer skin; if the zucchini is old, remove the core and cut into small cubes (2x2x2 cm).

Peel the onion and cut into half rings or quarters if the onion is very large.

Wash the sweet bell peppers, remove the cores with seeds and cut them into approximately the same cubes.

My tomatoes remove the skin and grind into any shape. You can even just grate it.

If we add garlic, we also peel it, wash it and chop it in any way convenient for you.

The most labor-intensive process is over. Now the technology itself, how to prepare a zucchini salad.

Place all the cooked vegetables in the required size pan.

Add water, vegetable oil, tomato paste, salt and sugar.

Mix everything thoroughly and put on fire.

When the zucchini salad boils, add vinegar and chopped onion.

Stirring regularly, cook the salad for another 10-15 minutes.

Now add the chopped zucchini and wait for it to boil.

After boiling, cook for another 10-15 minutes.

Now add the diced sweet pepper, let it boil and cook for another 10-15 minutes.

Now it's the turn of the tomatoes, garlic and hot peppers (if you add them).

Again, bring everything to a boil and let simmer for 10-15 minutes.

ATTENTION: we remember that during cooking our homemade zucchini preparations need to be stirred regularly, but carefully!

Place our zucchini salad, hot, in pre-prepared jars, cover with lids (COVER, but DO NOT tighten) and sterilize in a suitable pan. The time to sterilize tomato and zucchini salad depends on the size of the jars. And only after that we tighten the lids and turn the jars upside down.
