Basic compliance with all the rules will help preserve the taste of balyk for a long time. It's not difficult at all, you just have to listen to each of the tips.

Rules for storing fish balyk

A fresh delicacy product must be stored in a refrigerator (at a temperature of 2-7 ° C) in a package that closes tightly. Ideally, this is a plastic food tray or ziplock bag. The container should not have any third-party aromas.

In such conditions, fish balyk can be suitable for consumption for one month. After this time, you can eat it, but the taste will not be the same - the product will become dry.

Some chefs are sure that balyk can only be stored for a couple of weeks at temperatures from -2 C° to -5 C°. They base their opinion on the fact that flesh without skin is more vulnerable to pathogenic organisms.

Balyk, which is not suitable for consumption, sticks to the fingers, has a whitish color, a sour taste and a specific smell. But don't wait until all these characteristics appear; it's best to eat dried fish within the expiration date.

Rules for storing balyk meat

For meat balyk, the best packaging for storage would be glass or plastic containers that are hermetically sealed.You can even wrap it tightly in cling film, the main thing is to block the flow of air to the meat. You cannot place similar meat products (jamon, prosciutto, basturma, etc.) next to each other in the same package so that they do not interrupt each other’s flavors.

Meat balyk cannot be stored where it is at least a little damp. Therefore, before sending each piece of meat into packaging, you need to blot it with a cloth or paper towel. To be more confident that “everything will be dry,” you can put a couple of paper napkins in the container with the balyk. As soon as they become damp, you need to put in new ones.

Balyk cannot be packaged while it is hot. The release of condensation will lead to the formation of mold.

Expiration dates meat balyk:

  • in a pantry or other place where it is cold, the meat product can be stored for up to 30 days;
  • on any shelf of the refrigeration unit for up to 6 months;
  • in the freezer for up to 1 year.

Do not forget that balyk will be suitable for consumption within the stated periods only when all requirements for storing the meat delicacy are met.
