How to make sauerkraut in a jar, simple preparation with peppers and carrots - step-by-step recipe with photos.
Sauerkraut, and even with bell peppers and carrots, is a powerful vitamin bomb. In winter, such homemade preparations will save you from vitamin deficiency. In addition, it is so tasty that it has firmly taken pride of place on our table. Anyone can prepare several jars of such sauerkraut for future use. This does not require large financial costs, a lot of time, or special skills.
For 1 kg of cabbage, take 300 g of carrots and 200 g of bell pepper.
For the brine: for 1 liter of cold water, 1 tablespoon of salt.
How to ferment cabbage in jars for the winter.
Remove the top leaves from the forks, wash the carrots, and remove the seeds from the washed peppers.
Then, chop the cabbage (straws or small cubes) and pepper, grate the carrots on a coarse grater.
Mix everything, but do not knead.
Divide the mixture into the jars as tightly as possible. You can use 3-liter ones, but 1-2 liter jars are more convenient to use and store.
Pour brine into the preparations. To prevent the cabbage from floating, it’s a good idea to put wooden ice cream sticks or plastic cotton swabs into the jars, on top of the cabbage, which you first remove from the cotton wool.
For 2-3 days, while the cabbage is “fermenting,” pierce it with long sharp objects and thus free it from the resulting gases. It is better if these are not metal objects.For example, it could be a plastic knitting needle.
When the workpiece “calms down,” cover the jars with lids and put them in the refrigerator.
Before serving sauerkraut, you can add garlic or onion to it. In general, vary according to your own taste.
