Salted dried fish has a distinctive feature from other products: to preserve it, you need to choose a cool, dark place that has a fairly high air humidity (70-80 percent). If there is a lack of moisture, it will dry out and become tasteless. The optimal temperature conditions for proper storage of the battering ram are from 3 to 8 °C.
Containers for storing dried fish
It is very good if it is possible to purchase special packaging to save the ram. Such containers do not allow the fish to dry out or gain too much moisture. Humidity can encourage mold to form. By storing the ram in the fresh air, you can easily spoil the product, since its fat, under such conditions, will begin to oxidize and, as a result, the fish will have an unpleasant taste.
It is correct to store the battering ram in packaging made of corrugated cardboard, wooden boxes, matting, or craft packaging.You should not use fabric bags or paper containers for these purposes. The sharp protrusions of the ram can puncture similar fish packaging. Thus, naturally, the integrity will be compromised, and this will not be able to prevent moisture (or even insects) from “penetrating” inside. One of the best packaging is considered to be kraft paper, which has a polyethylene surface on one side. If you send salted dried fish in a bag, its shelf life will be only 2-3 months.
Storing battering rams in the refrigerator
Dried fish can also be stored at home by placing it in the refrigerator. The ram remains in a suitable condition for a long time, especially if the temperature of the device fluctuates within +4 °C. You can extend the shelf life by spreading dry fish with oil (it is better to use olive oil) and placing it in glass jars. Also, for storage in the refrigerator, you can wrap the battering ram in thick paper, and then wrap it in plastic wrap.
