Next, thoroughly wash the beets and place them in boiling water, in which they are boiled: up to 20 minutes for small root vegetables and 45 minutes for large root vegetables. To preserve the beautiful and juicy color of the vegetable, it must be boiled whole, without cutting or removing the skin.
After the specified time has passed, remove from boiling water and let cool. If you are in a hurry, the root vegetables can be placed in cold water. After this procedure, the skin will be easier to clean.
When the beets have cooled, remove the skins and cut large beets into small pieces. Small root vegetables can be marinated whole rather than cut.
Next, we prepare the marinade, which can be slightly acidic, sour or spicy. To prepare each of the marinades you will need 10 liters of water and 500 - 600 g of salt, 5 g of cloves, bay leaf, cinnamon and 3 g of allspice.
Marinades differ from each other in the amount of sugar and vinegar essence.
For a slightly acidic marinade you will need the same amount of sugar (500-600 g) as salt and 150-170 ml of essence.
For a sour marinade, you will need more sugar and essence: from 600 to 900 g of sugar and 250 essence.
To prepare a spicy marinade you need about 1 kg of sugar and 470-530 ml of vinegar essence.
To prepare any marinade, dissolve sugar and salt in water, boil the solution and add vinegar essence.
Place the prepared boiled beets in liter or half-liter jars and pour one of the offered hot marinades in which to sterilize for 10-12 or 7-8 minutes, respectively.
Then, roll up the jars with tin lids and turn them over.
After the jars have cooled, they are taken out into the cold for further storage.
The preparation of pickled beets for the winter is now complete.
