How to properly store gingerbread
Gingerbread is a lovely, usually festive, confectionery product. But it often happens that a special tea party is still a few days away, but the baked goods are already ready. Then it is important to preserve the freshness of the gingerbread until the right moment.
There are only a few important recommendations for storing gingerbread cookies that should not be neglected.
General rules for storing gingerbread cookies
Gingerbread can be stored for quite a long time (almost 3 months). This is due to the fact that they contain ingredients (honey and spices) that act as natural preservatives. During the first month, after preparation, the dessert product has the most pronounced taste.
Gingerbread with ginger glaze (confectioners call it “icing”) lasts a little less. A beautiful coating behaves quite capriciously, and requires special treatment in terms of conservation.
- It is optimal if in the place where the glazed gingerbread cookies are placed for saving, the thermometer readings fluctuate between +18 °C and +23 °C.
- In a refrigeration device, the glaze coating of gingerbread cookies can become damp, and the product itself can lose quality due to a sharp change in temperature conditions. Therefore, it is advisable to store gingerbread cookies outside the refrigerator, wrapped in film.
- The air humidity in the place where gingerbread is stored should be 75%. If they are below this norm, the gingerbread cookies will dry out, and the glaze will become brittle and peel off.At high humidity levels, sweet baked goods will turn into a product that is too soft (for this type of cookie).
Naturally, in order to fully enjoy the taste of gingerbread, you need to consume them within 1 month after preparation.
Storing painted gingerbread cookies
Kozuli is a type of gingerbread that is a traditional treat for the Pomors (northern people). The dough of such a product contains no honey or very little of it, in addition, it contains very little fat. In this regard, roe gingerbread can be stored for quite a long period of time. Sometimes such baked goods can be used for as long as 3 years. Such a product must be sent for storage in a hermetically sealed bag with a zip fastener. This way it will be protected from moisture. Place the bag of gingerbread cookies for storage in a kitchen cabinet, away from the stove or radiator.
