How to properly store boletus mushrooms for the winter
Storing boletus mushrooms is a very sensitive issue that worries every avid mushroom picker. After all, fresh mushrooms do not last very long. Therefore, they need to be quickly prepared for the winter.
In addition, it is important to take each process responsibly and provide the harvesting with the necessary conditions so that the boletus mushrooms can stand in a suitable form until the next season.

How long and how can fresh boletus be stored?
If it is not possible to immediately process the mushrooms brought from the forest, then you shouldn’t even worry about them for the first 2-3 hours, just leaving them in the kitchen. The refrigerator will help keep boletus mushrooms fresh for 2-3 days. Before doing this, the mushrooms need to be thoroughly cleaned, immersed in water for half an hour, and then rinsed well. Then, you should once again make sure that they are clean, put them in a colander, then place them on a napkin to dry. And only after all these procedures can the boletus mushrooms be placed in the refrigerator in a deep bowl covered with a napkin on top.
But we must remember that after 3 (maximum 4) days, keeping them in an unprocessed form is already dangerous. These boletus mushrooms can cause poisoning.
Methods for long-term storage of boletus mushrooms
The most common option for harvesting boletus mushrooms for the winter is freezing. In this form, mushrooms can be edible:
- at temperatures from -12 ℃ to -14 °C - 3-4 months;
- from -14 °C to -18 ℃ − 4-6 months;
- from -18 °C to -24 °C – up to 1 year.
It is better to immerse boletus mushrooms in the freezer after first blanching them in salted water (a tablespoon of salt per liter of water).
It is also very convenient to save mushrooms dried. Provided that they are prepared in a tightly closed container, and in a dry room they can be eaten for 2-3 years. But only when they are also dried correctly.
There are many delicious boletus preparations in pickled form. If you carefully adhere to the necessary technology when preparing such a dish for the winter, then the mushrooms can be safely preserved until the next harvest. The main thing is to keep them in sterile jars hermetically sealed with metal lids in a cool, dark room with moderate humidity.
If for one reason or another the jars are swollen, then the boletus mushrooms from them must be immediately discarded.
