Proper preservation of sauces at home

In general, most sauces cannot be stored for long.

Cold sauces made from fresh herbs (such as pesto), sour cream and homemade mayonnaise are best prepared for one-time use and not for long-term storage.

If you want the hot sauce to remain intact for several hours before serving, you should simply place it in a water bath over low heat. It is important to ensure that the liquid does not start to boil. To avoid separation, it is especially important not to overheat creamy sauces or those that contain eggs.

To store sauces for a longer period of time, you need to use a refrigeration device. To do this, the liquid chilled seasoning must be poured into a sterile glass jar that has a tight lid. Instead, you can use regular parchment and tie the neck with an elastic band.

Store-bought sauces should only be opened when needed. An uncorked sauce will not be stored for long, unlike a closed one.

Many housewives, in order to preserve opened or freshly prepared homemade sauce longer, freeze it.

Sauce shelf life

Hot sauces prepared from a decoction of fish, mushrooms or meat can be stored for 4 hours before serving. At the same time, you need to ensure that the temperature of the seasoning stored in a water bath (marlite) does not exceed 85°C.

Hot sauces with eggs or butter can be stored for an hour and a half, making sure that the thermometer mark during this period is not higher than 65°C. At a higher temperature, the process of delamination will begin in it.

Homemade mayonnaise and salad dressings are stored in the refrigerator for no more than a day. To make this period longer, they must contain natural preservatives: lemon or vinegar, mustard, salt, pepper, horseradish.

Sauces such as pesto, packaged in sterilized containers, can be stored in the refrigerator for up to a month, provided that their surface is always covered with a layer of vegetable oil. Packaged in portions, a similar sauce can be stored in the freezer for 3-4 months.

Natural sauce made from fresh tomatoes can be in suitable condition for up to a day. The shelf life of this tomato sauce will last significantly if it contains horseradish (this seasoning is called crap) and/or mustard.
