Rules and terms for storing tremors in winter at home

The most important thing when saving salted trout is to comply with temperature conditions. In a cool, well-ventilated room, it should not be lower than 0˚C. The most optimal thermometer readings are considered to be from +5 to +6˚С. At temperatures below 0 ˚C, the salted preparation of the mushrooms will freeze, causing the mushrooms to lose their taste and, moreover, begin to crumble. If the thermometer in a room with mushrooms warms up to +7 ˚С or more, they will begin to turn sour and will spoil very soon.

It is also important to take into account the degree of salinity of the fritters: with a large salt capacity, they will be stored longer and vice versa. But this cannot be considered a correct method of saving. Due to a long stay in too salty brine, it is impossible to eat the volushki, and once soaked, they can no longer have the same taste.

If there is not enough salt in the jar with tremors, the product will begin to ferment.Therefore, it is necessary to cook exactly as written in a particular recipe. You also need to make sure that the waves are covered with brine at all times. To do this, the container with the workpiece is covered with canvas cloth, and something very heavy is rolled on top. If after some time the brine becomes less than needed, you should prepare the same new one and pour it over the mushrooms. If mold forms on the surface of the mushrooms, the fabric should be removed, rinsed thoroughly, and the mushrooms should be covered with it again. In this case, it is also advisable to rinse the flukes with chilled boiling water and fill them with new brine.

It is also necessary from time to time to shake the container with the pickles or transfer them to another container so that the brine “moves” through the container with salting.

Salted volushki are suitable for consumption for six months, but only under the right conditions. The initial expiration date should be counted from the moment the mushrooms are ready for consumption.

It is customary to salt volnushki in a barrel, enamel bucket, pan, or simply in 3-liter glass jars. Regardless of the dishes chosen, they must be perfectly clean. Any bacteria provokes fermentation of the product.

Salted trumpets should only be stored in the refrigerator. If there are a lot of blanks or it is in a large container, then the best place to store the product is a cellar or basement. Many housewives who do not have such a room place salty waves on the balcony (but only if it is glazed). To protect mushrooms from possible freezing, they should be placed in boxes insulated with old blankets, batting or sawdust.
