Truffle shelf life

Truffle mushroom can be stored at home for up to 10 days. To do this, it must be wrapped in a piece of fabric, placed in an airtight container and sent to a refrigeration device. The fabric must be changed every 2 days, otherwise the truffle will rot. Instead of natural canvas, you can use soft paper. It must be changed every day.

The truffle is not cleaned before being sent for storage - this will prolong its suitability. When preserving the delicacy, it is imperative to ensure that the mushroom is not in an excessively humid environment, otherwise it will spoil very quickly. That's why they use dry cereal, cloth or paper - they can increase the shelf life to 4 weeks.

It is not advisable to sterilize truffle mushrooms, since at temperatures exceeding +80 °C its smell is lost.

Proper storage of truffles

In order to preserve the unique taste of the truffle, before sending it for storage, it is placed in a container that is not transparent and covered with dry grains of rice. Then put it in the darkest place of the refrigerator. After a month, the rice grains will absorb the truffle aroma.There is no need to throw them away; rice will make an ideal side dish or other delicious dish.

Instead of grains of this cereal, the truffle, thoroughly washed from the soil, is poured with olive oil. It oozes mushroom juice and acquires a wonderful aroma.

Truffles lend themselves well to freezing. To do this, each fruiting body must be wrapped separately in foil or placed several copies at a time in a container that does not allow air to pass through. It can also be frozen in sliced ​​form. The temperature of the freezer should range from -10 °C to -15 °C. The mushroom should be defrosted at room temperature.

Another method of storing truffles is common among many cooks. They cover the mushroom with sand, place a damp piece of cloth on top, and then close the container with a lid. Thus, it is possible to increase the shelf life of truffles to 4 weeks.

Some cooks also preserve delicious mushrooms (without heat treatment). To do this, it must be placed in a small glass container and filled with alcohol (preferably alcohol). It should cover the truffle a little. It is not recommended to store the mushroom in this form for longer than 2 years. During this period of time, alcohol will absorb all the smell and taste of the valuable product. You can make a flavorful sauce using truffle alcohol, or you can add it to meat or fish dishes.
