For its production, the most valuable part of the carcass is used - the fleshy back muscle (sirloin). The thickness of the lard on it, as a rule, does not exceed 0.5 cm. To prepare this baked meat at home, you do not need any special skills or a lot of time. After performing a couple of simple manipulations with the pork tenderloin and sending it to the oven, you will receive a delicious homemade product with a moderate amount of fat. It will be without any chemical additives or artificial preservatives.

Preparation of carbonate.

For 1 kg of meat you need to take 40 g of salt; 0.1 g nutmeg; a clove of garlic.

When separating fillet from a loin, it is important to try to ensure that a uniform layer of fat about 1 cm thick remains along the entire length of the selected piece of meat. This layer of fat will help your product retain its juiciness and give it a refined taste.

Make light cuts on the surface of a piece of meat with a knife. Rub it with salt, nutmeg and chopped garlic (you can do without garlic).

Place the semi-finished product on a baking sheet, fat side up, and place in the oven.
