Let's take it:

  • 1.5 kg quince
  • 1.3 kg sugar
  • 1 glass of water
  • 0.5 lemon (or citric acid)

It is advisable to choose ripe, unspoiled fruits. And first rinse them thoroughly.

There is fluff on the quince. We don't need him. Therefore, we will remove it with a brush. Rinse under the tap again. After drying it a little, we peel the quince (don’t throw it away - you can later make a delicious compote from it!) and seeds. Boil it in water.Then, strain the broth and pour it over the cut quince.

Grate the lemon zest. Let's squeeze the juice out of it. We will send everything into this water. Cook the fruit in a basin. Once it has boiled, you can add granulated sugar.

Cook as you would cook jam for an hour. Stir often! The taste of burnt quince is unpleasant.

Have you noticed that the mass has thickened? Please note that quince marmalade without a thickener is a reality! Turn off the gas. If necessary, puree the mixture in a convenient way, having cooled it first. But that's not all - we boil it down so that it can be made into marmalade. Making marmalade in a slow cooker is quick (from 35 minutes - depending on the type of gadget) and convenient.

Let's take it:

  • 1 kg quince
  • 1 kg sugar
  • 1 vanilla pod
  • 1.5 liters of water

Cooking procedure

Having cut the quinces into 4 parts (carefully - the knife can jump off the surface of the rough fruit at any moment), remove the core and cut the quarters into one-centimeter cubes. After pouring water into the bowl, turn on the cooking mode. When the water boils, add the quince and cook for 20 minutes. Let's add water. Let the quince cool and puree it.Place the puree back into the multicooker and, adding vanilla and sugar, cook in milk porridge mode for a quarter of an hour without covering. Make sure that the quince does not burn and is not runny or too thick. Place the mixture (two centimeters thick) on the parchment with which the raft is lined. Let it dry for two days. And then the layer is cut into diamonds, which can be rolled in powdered sugar.

Is it possible? Yes, it's possible, but is it necessary? After all, quince itself is sour. But, if you decide to take this step, the preparation technology is the same as with sugar. Unless you have to cook without lemon. The main thing in this process is to boil the mass well and dry it in a convenient way. You can dip it in honey while eating!

Marmalade cannot be stored for a long time. It is advisable to use it within two months. But you need to store it in a container with a tightly closed lid in a dry place.
